Good Morning Stampers! Yesterday I enjoyed visiting with my friends/cutomers at the Stamp-A-Stack and Hostess Club gathering. I had promised you another Hostess Club card, but I ran short on time over the weekend. There just aren't enough hours in a day for stamping! In addition to the Tropical Party card I showed you on Friday, my hostess club ladies were able to choose a card from the Stamp-A-Stack cards. I wanted to provide a sweet treat, so I baked some Lemon Bars for the girls and wanted to share the recipe. I found it on www.RecipeMatcher.com.
Lemon Bars Recipe
1 cup Butter, softened
1/2 cup Sugar--white
4 eggs
4 Tablespoons All-Purpose Flour
1 1/2 cups Sugar--white
2 Lemons, Juiced (4 Tablespoons lemon juice)
Cooking Directions:
1. Preheat oven to 350 degrees.
2. In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9 x 13 pan.
3. Bake for 15-20 Minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
4. Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.
